Xitus is the top-of-the-range Andes Cru, an icon of the winery. When a treasure map is drawn, the place where the treasure is buried is marked with an X: hence the name of this wine, a play on the word In Situ and the letter X. Here we have the maximum expression of high-altitude Cabernet Sauvignon, blending 80% Cabernet from Mariscal and 20% from Pirque. Mariscal has a very unique soil: the grapes are planted in very rocky soils, with excellent drainage and full of fossils and roots. The first 50cm of soil are muddy and soon after appear the alluvial rocks that were once part of the Maipo River bed. In Pirque, the terroir is strongly influenced by the Cordillera with altitudes and cool breezes. Both vineyards present the perfect conditions for red wines, especially Cabernet Sauvignon. The grapes are harvested and selected by hand, destemmed, and fermented in stainless steel for 10 days. The grapes from each vineyard are fermented separately and blended before aging in barrels for 15 months. Only 3,900 bottles were produced in 2021.
